    Ingredients
  • 1/2 pound JENNIE-O TURKEY STORE® Deli Premium Seasoned Buffalo Style Turkey Breast, minced
  • 1/2 cup shredded carrot
  • 3 green onions, minced
  • 1/4 cup fresh cilantro, minced
  • 1 tablespoon fresh mint, minced
  • 1/3 cup peanuts, toasted, salted and coarsely chopped
  • 8 rice paper spring roll wrappers
    Directions
  1. Toss JENNIE-O TURKEY STORE® Premium Seasoned Buffalo Style Turkey Breast, carrot, onion, herbs, and peanuts in a small bowl. Lay individual rice paper wrap on flat surface in a "diamond" position. Place a mound of turkey mixture in center. Fold corner nearest you over filling. Fold in left corner of wrap over filling, then right corner of wrap over filling. Roll up tightly. Seal with water on the tip and place seam side down on appetizer platter. Repeat with remaining ingredients. Serve with a peanut dipping sauce.

  3. Any variety of JENNIE-O TURKEY STORE® turkey breast can be used in this recipe. Add bean sprouts, radish or cashews to the mixture. This mixture makes delightful eggrolls as well. Follow the same instructions using won ton wrappers instead of rice paper wrappers. Fry in peanut oil 3-4 minutes until golden brown. Serve with the same peanut dipping sauce.
