Turkey, Salsa, Black Bean & Rice Salad

    Ingredients
  • 2 cups diced JENNIE-O TURKEY STORE® Rotisserie Turkey Breast
  • 1 cup cooked brown rice
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup diced fresh or canned mango
  • 2 green onions, thinly sliced
  • 1 cup salsa, slightly drained
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh squeezed lime juice
  • 1 tablespoon honey
  • ½ teaspoon ground cumin
    Directions
  1. 1. In a large bowl, combine the turkey, rice, beans, mango and green onions.
  2. 2. In a separate bowl, combine the salsa, olive oil, lime juice, honey and cumin.
  3. 3. Toss dressing with the turkey and bean mixture. Chill salad until ready to serve. Makes 6 cups.
  4. SERVING SUGGESTION: Serve salad in lettuce cups.
  5. PICNIC POINTER: Spoon salad mixture into small glass jars with lids. Place salad in cooler with ice packs.
