large sweet potatoes, sliced into 1/4-inch slices
kosher salt to taste
mascarpone cheese
chopped fresh chive leaves, HORMEL® bacon pieces
freshly ground pepper

Heat oven to 400°F.

Place sweet potato slices on parchment-lined baking sheet; spray with cooking spray and sprinkle with salt.

Bake 20 minutes, turning half way through.

Let stand 10 minutes.

Dollop with 1/2 teaspoon mascarpone cheese, sprinkle with chives, turkey bacon pieces and pepper.
