Injection Marinade

cup lemon juice

cup liquid crab boil seasoning

cup olive oil
1/4
cup butter

tablespoons onion powder

tablespoons garlic powder
2
tablespoons Cajun seasoning

teaspoon hot sauce
1
teaspoon cayenne pepper
Rub
2
tablespoons paprika
2
tablespoons garlic powder
2
tablespoons dried oregano
1
tablespoon kosher salt
1
tablespoon onion powder
2
teaspoons freshly ground black pepper
2
teaspoons cayenne pepper

Heat oven to 325°F with oven rack in lower third of oven. Place a roasting rack in a large roasting pan.

Pat turkey dry with paper towels.

In saucepan, over medium heat, combine Injection Marinade Ingredients. Bring to a simmer, cooking until butter is completely melted and mixture is liquified. Keep warm.

Using a meat injector, inject directly into breast, leg, and thigh meat. Do this a few times to make sure the marinade is well dispersed throughout turkey. Wipe away any excess that may leak out.

In bowl, combine all rub ingredients. Rub spice mixture on turkey.

Place turkey on rack breast side up. Loosely cover with foil. Roast at 325°F 1 hour. Remove foil.

Roast for a total of 2½ to 3½ hours, or until meat thermometer inserted into thickest part of thigh registers 180°F. Juices should run clear. Always confirm doneness with a meat thermometer. Let turkey stand 20 minutes before carving.
