TURKEY SALAD

cup fat-free mayonnaise

cup chopped JENNIE-O® DELI FAVORITES® Oven Roasted Turkey Breast

CORN CAKES

cups frozen corn kernels, thawed

cup flour

teaspoon baking powder

To make the turkey salad, in bowl combine, mayonnaise, turkey, green and red pepper, onion and celery; cover and refrigerate until ready to use.

To make the corn cakes, in bowl combine, corn, onion, flour, baking powder, baking soda and milk.

Heat a non-stick skillet over medium heat. Drop 1 tablespoon of corn cake mixture about 1 1/2-inches apart in hot skillet.

Spread mixture to make corn cakes round.

Cook about 2 minutes per side until golden brown.

Place corn cakes on a serving platter.

Top with turkey salad mixture.
