cup turkey drippings (fat and juices from roasted turkey)

cup flour

cups liquid (juices from turkey, broth, water)

teaspoons chopped fresh thyme

teaspoons chopped fresh parsley

Pour drippings from roasting pan into bowl, leaving brown particles in pan.

Return ¼ cup drippings to roasting pan. Stir in flour to make roux paste.

Place roaster over medium heat and stir constantly, whisking until smooth and bubbly.

Stir in liquid/broth. Heat to boiling, whisking constantly. Boil, whisking for 1 minute.

Stir in thyme, parsley, salt and pepper. Remove from heat.
