pounds JENNIE-O® Hot Italian Turkey Sausage, sliced

tablespoon olive oil

red onion, sliced

red bell peppers, sliced

cloves garlic, minced

cups rice, rinsed and drained

cups chicken stock

cup sliced fresh basil leaves, plus additional basil to garnish

teaspoon garlic powder

teaspoon onion powder

Spray a large skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

Add sausage. Cook 2 to 3 minutes per side, or until the sausage is browned. Remove from pan. Set aside.

To same skillet over medium-high heat, heat oil. Add onions and peppers. Cook 4 to 5 minutes. Add garlic and rice. Cook 2 minutes, stirring often.

Stir in chicken stock, basil, salt, garlic powder, onion powder, and oregano. Add reserved sausage back to skillet with any juices. Bring to simmer. Cover and cook over low heat 20 minutes. *Always cook the sausage to well-done, 165°F as measured by a meat thermometer.

Drizzle individual servings with pesto. Garnish with fresh basil.
