large eggs or 1 cup egg substitute

cup milk

cup shredded cheddar cheese

cup tricolor bell peppers, diced

Heat oven to 350°F.

Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

Place 1/2 inch thick patties in hot skillet. Turn occasionally and cook approximately 15 to 17 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Set aside.

In bowl, whisk eggs. Add milk, sausage, cheese and peppers.

Spray 2 1/2-inch muffin tins with non-stick cooking spray. Portion egg mixture into each muffin tin. Bake 12 to 15 minutes or until set. Place a small pan of water in oven with muffin tin. This will help keep the eggs soft and not chewy.
