cups risotto rice

pint grape tomatoes, halved

quart reduced-sodium chicken broth, heated

Heat oven to 375°F.

Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.

In skillet, cook onion and butter 3 to 4 minutes until soft. Add bacon and rice; mix. Add grape tomatoes and hot stock; stir.

Cover and bake 30 minutes.

Remove from oven and stir in cheese.
