In small bowl, combine onion and lime juice; let stand 15 minutes.

Heat large, non-stick skillet over medium-high heat. Add oil, ginger and garlic. Cook 1 minute or until fragrant. Remove skillet from heat.

In large bowl, combine onion mixture, turkey, mint, cilantro, sauces and carrot.
