cups cooked brown rice

(15-ounce) can black beans, rinsed and drained

cup cooked or frozen corn

bell peppers, cut into strips

red onion, thinly sliced

cup cherry tomatoes, halved

cup chopped fresh cilantro
lime wedges and avocado slices, if desired

In large skillet, heat olive oil over medium heat. Preheat skillet over medium-high heat.

Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.

Divide turkey, rice, beans, corn, bell pepper, onion, tomatoes and cilantro into 4 sealable containers. Refrigerate until ready to use. Garnish with lime wedges and avocado, if desired.
